Spitfire - photo credit: Carl RatcliffeWhilst the girls had a marathon Prime Suspect watching session, I hid away and got another brew on to start building up the stocks again. The Hobgoblin is very good to drink now, but not a session beer as such. I’m hoping to get back to some good results after the unknown quantity that is the London Pride clone I brewed a few weeks back (more later).

So, the recipe is for “Spitfire” (Shepherd Neame):

Pale (MO) 3.6kg
Wheat Malt 191g
Crystal 384g
Amber 239g
Torrefied Wheat 384g

Mashed at 67C for 2hrs

Hops:

Target (9% 2006 crop) - 30g (90min)
EKG (5.5%) 28g - 15min
EKG 14g - 1min

Was all done and dusted and in the FV - 22L @ 1046 and pitched in a packet of Winsdor yeast - first time with this one so we’ll see how it goes (another tough to clear - after carbonation, I may crash cool it to get the yeast to drop quicker in the bottles). Fermentation kicked off rapidly and a nice 2-3 inch head formed inside 8 hours.

Back to the Pride…

I managed also to bottle up the rather odd smelling London Pride. I don’t know what’s going on with this one. I bottled it up and have since had a very early sneaky taste of an underfilled bottle. The cloves smell has receded - the taste is, well, odd, though not as bad as suspected - I’m hoping that it’s just because it is so green (needs about another 2-3 weeks conditioning), but I have a feeling there’s going to be something funny about this one…

  2. Trying… when I get the astronomy back up and going, I might get a few more - but that looks a way off yet… Is MrC available for brewing on the 20th at all?
