London Pride with Recultured Fuller’s Yeast
Posted by Graeme Coates in homebrew, recipes
Had a successful (I think!) effort at recovering the yeast from a bottle of Fuller’s 1845 - so now to use it in a version of London Pride from Wheeler and Protz’s “Brew Your Own British Real Ale”:
3.65kg Maris Otter
290g flaked maize
130g crystal malt
25g black maltHops:
Target 19g (9% - 2006 crop) - 90min
Challenger 25g (5.6% - 2006 crop) - 90min
EKG 20g (3.9%) - 15minYeast: From Fuller’s 1845
@ ~19C
The yeast was propagated in a demijohn a couple of weeks beforehand using 2 litres of wort made with 200g of spraymalt (boiled for 10 min); the decanted yeast was stored in the fridge until brewday under pre-boiled and cooled water. I used a litre of cooled wort, boiled for 10 minutes beforehand to wake the yeast (which started off very well in the bottle prior to pitching!), and then pitched it all into the FV after running the wort through the CFC.

Wheeler and Protz have got this one bang on in my experience I’ve done it a couple of times. I was drinking it in London a while back and then came home (in the same day) and sampled a pint of this brew and it was near identical. Keep us posted.
Looking Ok, though gravity not dropping particularly quickly - most likely under pitched. Though, the yeast seems to be working - just taking a time to get up to speed. Pride is a great pint when kept well - though the Fuller’s recipe has changed slightly in recent times, and since this one was produced. Still, starting to smell good in the FV - and looking forward to harvesting the slurry for repitching in a Chiswick and/or an ESB.
Hmmm. Looks OK, but a little bit of an odd aroma to it… cloves…. will see how it turns out, but hopes aren’t high on this one.
[...] as such. I’m hoping to get back to some good results after the unknown quantity that is the London Pride clone I brewed a few weeks back (more [...]
I love London Pride it is the perfect pint IMHO. I couldn’t be bothered with that intricate procedure you created though ! Do reckon there could be a close approximation using a kit and perhaps throwing in a handful of hops ?
Good luck with it and I hope it lives up to expectations.
Not sure if there’s a kit that’ll get close to this one, but, if you can go through the process of reculturing the yeast up (I think a stir-plate is the way forward here - more on this soon I hope), then it’d be good to try that - the Fullers yeast I think adds a lot to the flavour (if you can pitch it right!). This is coming on - still tastes a bit too green so will try a bit of cold conditioning to hopefully fix it - though the flavours are there and do have that “Pride” taste to them.
